Bean And Rice Burritos recipe



  1. Cook the rice as per instructions and drain.
  2. Place the beans in a saucepan and mash with a potato masher.
  3. Add the cooked rice, spices and water to the mashed beans.
  4. Heat 5 to 10 minutes.
  5. Meanwhile, prepare the vegetables.
  6. Heat the tortillas under a medium grill, having splashed with a little water.
  7. Remove and place a line of bean mixture down the middle of each tortilla.
  8. Top with lettuce, spring onions, tomato, and salsa.
  9. Tuck in the top and bottom edges, roll into a burrito, and serve immediately, topped with additional salsa if desired.
