Bean Moussaka recipe



  1. Put (drained) beans in a pot with the tomatoes, garlic, onion, 1 teaspoon of the salt, 1 teaspoon of the pepper & sage.
  2. Add stock & allow to simmer for 10 minutes.
  3. Meanwhile, cut aubergine and potatoes into rounds.
  4. Deep fry the aubergine in olive oil until they begin to turn golden and then do the same with the potatoes. Set aside.
  5. In a small pot, gently heat the butter.
  6. Stir in the flour followed by the milk.
  7. Add remaining salt, pepper to the nutmeg.
  8. Simmer gently for 1 minute.
  9. Grease the base & sides of a small casserole dish.
  10. Add a layer of potatoes, aubergine and beans.
  11. Cover with sauce.
  12. Bake at 375 degrees F for about 30 minutes, or until the crust is golden.

Serves 4.
