South African Vegetable Biryani recipe

Ingredients

Method

  1. In a large, heavy frying pan, fry the onions in the butter until golden.
  2. Add the ginger, garlic & chilli paste to the pan.
  3. Fry for 5 or 6 minutes, stirring constantly.
  4. Add the lentils, peas, carrots & beans.
  5. Reduce heat & cook for 15 minutes.
  6. Add more butter if necessary.
  7. Add tomatoes, spices & mint. Stir for 5 minutes.
  8. Pour in 300ml of very hot water, cover & simmer until the vegetables are half-cooked.
  9. Add the rice, potatoes, salt & another 750ml of hot water.
  10. Cover & cook for 20 minutes or until the rice is done & the water is absorbed.

Serves 4
