Vegetable Curry With Cashews recipe



  1. Heat the butter in a large frying pan and fry the garlic & spices for 3 to 4 minutes, stirring frequently.
  2. Drop the aubergines into some boiling water for 4 to 5 minutes, then drain and dice them.
  3. Add all of the vegetables into the pan, along with the chilli.
  4. Fry everything gently for 8-10 minutes over a medium-high heat, stirring to mix thoroughly.
  5. Dissolve grated coconut in the boiling water & mix with vegetables.
  6. Add tomatoes cover & cook for 20 minutes.
  7. Just before serving stir in toasted cashews & serve over rice.

Serves 4
