Beef Ragout Country-Style

Beef Ragout Country-Style recipe



  1. Brown beef in hot oil in a deep frying pan over a high heat.
  2. Add onions and brown lightly, then add the garlic.
  3. Stir in tomatoes 3 tablespoons parsley, thyme, salt and pepper.
  4. Add wine and beef stock to just cover (add extra water if required) and bring to boil.
  5. Reduce heat, cover and simmer for 1 hour.
  6. Add mushrooms, then cover and simmer for a further 45 minutes or until the beef is tender.
  7. If desired simmer uncovered last 10 minutes to reduce liquid.
  8. Add olives, heat through and stir in any remaining parsley.
  9. Serve ragout with hot cooked noodles.

Garnish with parsley.
