Quick And Easy Pancakes recipe

Ingredients

Method

  1. Place the milk, eggs and pinch of salt in a bowl and whisk until smooth
  2. Place the flour into a small sieve above the bowl
  3. Gently shake the flour through the sieve whilst folding in the flour with a metal spoon
  4. Once all the flour has been folded in, give the mixture a final whisk until completely smooth
  5. Add half a teaspoon of butter to a small frying pan and heat
  6. Once hot, use a ladle to add enough pancake mixture to thinly coat the bottom of the pan
  7. Cook over a medium heat for about two minutes or until the pancake is lightly browned on the underside
  8. Toss the pancake
  9. Once the other side is nicely browned, after 1-2 minutes, remove from the pan
  10. Repeat until all pancakes are cooked adding an extra half teaspoon of butter to the pan between pancakes
  11. To serve, squeeze lemon juice over pancake, sprinkle with sugar and roll up
  12. Optionally, sprinkle with a little icing sugar and serve with fresh fruit such as segments of mandarin orange (or use blueberries or strawberries)

Serves 4 (2 pancakes each)
