Method

  1. Grease a medium baking dish.
  2. Cook noodles as per packet instructions and drain.
  3. Then, in a medium frying pan, cook the minced beef, onions, and garlic over a medium-high heat until beef is browned; draining excess fat if required.
  4. Add the soup and the mushroooms, mixing well.
  5. In large bowl, combine spinach, two-thirds of the cottage cheese and 2 eggs; mixing well.
  6. In another large bowl, combine cooked noodles with the remaining cottage cheese and the remaining egg, tossing gently to mix.
  7. Then, in greased dish, layer the noodle mixture, spinach and beef mixture; repeating until all of the ingredients are used.
  8. Cover with foil and cook for 35 - 40 min in the oven at 180 degrees C (Gas Mark 4).
  9. Let stand 5 minutes before serving.
