Meatball & Courgette Italiano recipe



  1. Combine minced beef, bread crumbs, onion, celery, half of the garlic salt and the pepper in a bowl.
  2. Shape into 12 balls and brown in a large heavy, nonstick frying pan over a medium heat; pouring off any excess fat.
  3. Add the tomatoes to frying pan with half the water, the beef stock cube and the remaining garlic salt.
  4. Bring to the boil, reduce the heat and simmer covered for 15 minutes.
  5. Dissolve cornflour in remaining water.
  6. Stir cornflour mixture and courgette slices into frying pan with meatballs and continue cooking, covered for 10 minutes.
  7. In meantime, cook pasta as per packet instructions.
  8. Serve the meatballs and sauce over cooked pasta.
