Fillet Of Pork In Spinach Sauce recipe



  1. Cook the spinach in boiling salted water for 2-3 minutes until tender, then drain thoroughly and rinse under cold running water.
  2. Put in a blender or food processor and process to a smooth puree. Set aside.
  3. Preheat oven to 160 degrees C (Gas Mark 3).
  4. Heat the oil in a large frying pan and fry the pork until it is browned all over.
  5. Remove and transfer the pork to a casserole dish.
  6. Add onions to the pan and cook, stirring, until a rich brown (8-10 minutes).
  7. Add garlic, ginger, garam masala, turmeric, bay leaf, tinned tomatos, and chillies.
  8. Cook, stirring, 4-5 minutes. Then add the yogurt and water and stir well.
  9. Add the sauce to the pork in the casserole dish, cover and bake for 1.5 hours, until the pork is nice and tender.
  10. Remove the bay leaf and stir in the spinach puree and a little salt, recover and bake another 10 minutes.
  11. Serve hot with freshly cut bread.
