Szechuan Beef Stir-Fry recipe

  1. Slice steak into strips.
  2. Combine soy sauce, 2 teaspoons oil, sugar and cornflour and coat the steak.
  3. Heat remaining 2 teaspoons oil in large frying pan over medium-high heat.
  4. Add garlic, ginger and red pepper and cook for 30 seconds.
  5. Add bell pepper and sweetcorn and then stir-fry 1 1/2 minutes.
  6. Add peas and stir-fry for 1-2 minures.
  7. Remove vegetables and stir-fry beef strips for 4-5 minutes until almost cooked, then return vegetables to frying pan and heat through.
  8. Serve with rice cooked as per packet instructions.

Makes 4 servings.
