Method

  1. Combine two tablespoons of the oyster sauce with white wine vinegar, ginger, soy sauce and one clove's worth of garlic in a bowl. Season with pepper, if desired.
  2. Add the salmon into the bowl and coat the fish well. Cover and refrigerate for up to an hour.
  3. Then, in a nonstick frying pan or seasoned wok, heat two teaspoons of the oil over a high heat.
  4. Add the remaining garlic into the pan and stir fry for 30 seconds.
  5. Then add the bean sprouts, french beans, sugar snap peas, spring onions and bell pepper. Stir-fry for 4-5 minutes or until vegetables are tender-crisp.
  6. Stir in the remaining one tablespoon of oyster sauce, sesame oil, sugar and some pepper, then remove from frying pan and set aside.
  7. Drain the fish, discarding the marinade. Heat remaining oil in the same frying pan. Add the fish and stir-fry for about 5-6 minutes or until done.
  8. Add vegetables back into the pan and gently toss to heat through.
