Szechwan Chicken With Spring Onions And Cashews recipe

Ingredients

Method

  1. Add one tablespoon of the soy and half the sherry into a bowl and marinade the chicken for 30 minutes.
  2. Combine the remaining soy sauce, cornflour, sugar and white wine vinegar and set aside.
  3. Heat the oil in a wok or frying pan. Add the red pepper and cook until lightly charred.
  4. In meantime, begin to cook the rice as per the packet instructions.
  5. Add the chicken to the pan and stir fry for 3-5 minutes. Remove chicken and set aside.
  6. Add spring onions, ginger and the remaining sherry and stir fry for a further two minutes.
  7. Return chicken to wok. Cook for a further 3-4 minutes, stirring constantly.
  8. Then add the soy sauce, cornflour, sugar and white wine vinegar mixture.
  9. Add cashews and serve over cooked rice.
