Coq Au Vin recipe

  1. Preheat oven to 180 degrees C (Gas Mark 4).
  2. Melt half the margarine in a large non-stick frying pan over a medium heat.
  3. Add the garlic powder and herbs and stir together for 1 minute.
  4. Cover the chicken breasts in flour and add them to frying pan, cooking until browned on both sides. Then move the chicken to a small casserole dish and set aside.
  5. Add the remaining margarine to the frying pan and add the mushrooms and onions; saute until golden.
  6. Add to the chicken in the casserole dish. Pour wine into frying pan and scrape around to de-glaze the pan.
  7. Pour the wine mixture over the chicken and bake, covered, for 55 to 60 minutes or until chicken is cooked but still tender.
