Mexican Chicken Kiev

Mexican Chicken Kiev recipe
A classic... but with a Mexican twist!



  1. Slice a large 'pocket' into the chicken breast and put some diced chilli and cheese in the centre of each.
  2. Combine the bread crumbs, parmesan cheese, chilli powder, salt, cumin and half the pepper in a shallow bowl.
  3. Baste each chicken breast with some melted butter and then dredge each breast into the bread crumb mixture.
  4. Place the well-coated chicken breast baking dish and bake uncovered at 200 degrees C (Gas Mark 6) for 25-30 minutes or until done.
  5. Half way through cooking, combine the tinned tomatoes, cumin, salt and spring onions into a small saucepan and bring to a simmer.
  6. Once the chicken kievs are cooked, remove from the oven and season with a little salt, pepper and the hot pepper sauce. 
  7. Serve kievs with sauce.
