Tasty Thai Cod Curry recipe



  1. Heat the oil and fry the shallots and garlic for 3-4 minutes in a saute pan.
  2. Dust the fish lightly with some flour and then seal both sides in the hot oil.
  3. Add the rest of the spices and the mustard powder and the coconut milk.
  4. Cover the pan and simmer for 15-20 minutes.
  5. In the meantime, cook the thai rice as per the packet instructions.
  6. Add the chillies half way through cooking to infuse into the sauce; removing the seeds first to reduce the heat of the dish.
