Vegetarian Greek Moussaka recipe



  1. Saute the fresh vegetables and tomatoes in olive oil in a deep pan over a medium heat for 10 minutes.
  2. Add the tinned tomatoes and herbs & spices and cook 5 minutes more. Then, bring to a simmer.
  3. Mix the milk, water and flour in a pan over a gentle heat.
  4. Once thickened, add the vegetables and the sauce into a small baking dish and bake at 160 degrees C (Gas Mark 3) for one hour, or until bubbly.

Serves 4.
