Works with any kind of pasta and great with spaghetti
450g italian sausage, diced
1 teaspoon red pepper flakes
1 medium onion, diced
3 clove garlic, pressed
1 tin italian plum tomatoes, drained and coarsely chopped
175g whipping cream
1/2 teaspoon salt
225g pasta (bow tie)
3 tablespoons fresh parsley, chopped
100g parmesan cheese, grated
2 tablespoons olive oil
1 tablespoon pepper
Heat the olive oil in heavy large frying pan over medium heat and then add sausage and pepper flakes.
Cook until the sausage looses its pinkness, whilst stirring frequently, for about 8-10 minutes.
Add the onion and the garlic into frying pan and cook until onion is tender and sausage begins to brown, stirring occasionally, for around 6-8 minutes.
Add the tomatoes, cream and salt. Simmer until mixture thickens slightly, about 4-5 minutes.
In parallel, cook the pasta as per the packet instructions, drain and set aside.
Once the sausages are completely cooked and the sauce has thickened nicely, add a little pepper and then remove from heat and serve with the pasta.
