  1. Beat the butter in a dish until it is light and fluffy and then slowly add the egg yolk and the cream, beating constantly.
  2. Add the grated cheese, a few tablespoons at a time, beating well.
  3. Then, cook the Fettuccine in boiling water as per the packet instructions, until cooked but still firm. Drain the fettuccine into a colander and place in a large heated serving bowl.
  4. Add the creamed butter and cheese mixture immediately and toss very gently.
  5. Finally, season with the salt and pepper.
