Mushroom Risotto recipe
Great tasting dish and SO simple....



  1. Melt the butter in a saucepan and cook the onion over a medium heat for 4-5 minutes, until soft.
  2. Add the rice into the pan and stir well.
  3. Stir in the wine and simmer for 3-4 minutes, to burn off the alcohol, then add 2/3rds of the stock.
  4. Simmer and stir for 5-6 minutes, or until the liquid is absrobed by the rice.
  5. Add the mushrooms into the pan along with the remaining stock and cook for 5-6 further minutes or until the stock is absorbed
  6. Stir in the parmesan cheese until melted and sprinkle with black pepper
  7. Serve hot
