Make everyone feel special with this simple yet delicious meal...
6 sausages, cut into pieces
1 medium onion, diced
2 celery stalks
2 tomatoes, chopped
2 tablespoons cornflour
80g cheese, grated
1 tablespoon tomato ketchup
1 teaspoon salt
1 tablespoon pepper
2 tablespoons olive oil
1 teaspoon dried basil (optional)
Heat the oil in a deep frying or saute pan and add in the diced sausages, onion and celery and cook, stirring frequently, over a medium heat for 7-8 minutes.
Stir in the tomatoes and cook for a further 8-10 minutes, until the sausages are cooked through.
In the meantime, cook the pasta as per packet instructions (usually around 10-12 minutes). Then drain, set aside and keep warm.
Add the sour cream, tomato sauce and cornflour into a large bowl and mix together.
Then add the sausage and vegetables into the sour cream mix; adding a little salt and pepper.
Pour into individual oven pie dishes (individual foil dishes are also fine) and sprinkle with cheese
Cook at 180 degrees C (Gas Mark 4) for 10-12 minutes until the cheese melts
Sprinkle with a little basil (optional) and serve.
