Herbed Roast Beef In Salt Crust recipe

Ingredients

Method

  1. Combine oil, onion, garlic salt, basil, marjoram, thyme and pepper. Mix well.
  2. Coat roasting joint well with marinade. Marinate in refrigerator 2 hours or overnight.
  3. Line roasting pan with foil.
  4. Combine coarse salt and a little water to form a thick slush.
  5. Pat mixture into a 1/2-inch-thick rectangle in roasting base of roasting dish. Pat roast dry with paper towels.
  6. Place roast on salt layer. Pack any remaining salt mixture around meat to seal well.
  7. Place roast in a 220 degree C oven and roast for 1.5 -2 hours. 
  8. Let roast stand 5 to 10 minutes in salt crust.
  9. After removing crust, whisk away any remaining salt crystals on roast with a pastry brush.

Makes 8 servings.
