Italian Sausage And Pepper Bake recipe



  1. Cook Italian sausage; drain.
  2. Slice into 1/2-inch pieces; set aside.
  3. Meanwhile, in large frying pan, heat oil.
  4. Add onion and peppers; cook until tender, about 3 minutes.
  5. Stir in diced tomatoes, tomato paste, seasonings and cooked sausage.
  6. Simmer for 2 minutes, stirring occasionally.
  7. Season with salt and pepper.
  8. Coat shallow medium baking dish with nonstick cooking spray.
  9. Spread half of sauce in bottom of dish.
  10. Arrange pasta in dish; cover with remaining sauce.
  11. Cover with foil; bake at 200 degrees C (Gas Mark 6) for 40 minutes.

Top with Parmesan cheese if desired.

Makes 4 servings.
