Sweet Potato Cake

Sweet Potato Cake recipe



  1. Preheat oven to 190 degrees C (Gas Mark 5).
  2. Grease three 8-inch layer pans and set aside.
  3. Combine oil and sugar and beat until smooth.
  4. Add egg yolks and beat well.
  5. Add hot water, then dry ingredients which have been sifted together.
  6. Stir in potatoes, nuts and vanilla extract and beat well.
  7. Beat egg whites until stiff and fold into mixture.
  8. Pour into prepared cake pans and bake 25 to 30 minutes.
  9. Meanwhile, combine milk, sugar, margarine, egg yolks and vanilla extract in a saucepan.
  10. Cook over medium heat about 12 minutes, stirring constantly, until mixture thickens.
  11. Remove from heat and add coconut.
  12. Beat until cool and of spreading consistency.
  13. Remove potato cakes from oven and cool.

Glaze with mix.
