Sweet Potato Souffle

Sweet Potato Souffle recipe



  1. Peel potatoes, slice and cook in water until tender.
  2. Beat with electric mixer until smooth.
  3. Add one portion of margarine, (white) sugar, salt, eggs, milk and vanilla extract.
  4. Mix well (it will look thin).
  5. Pour into a greased casserole dish and bake at 190 degrees C (Gas Mark 5) for 35 minutes or until it looks firm.
  6. Mix brown sugar, flour, pecans and final portion of butter and cover top of potatoes.
  7. Bake 10 minutes or until brown.

Serves 4
