Salmon Potato Pie

Salmon Potato Pie recipe
Great for using up leftover mashed potato.....



  1. Preheat oven to 190 degrees C (Gas Mark 5).
  2. Melt the margarine over medium heat in a medium saucepan.
  3. Stir in the flour and cook, stirring, for about 1 minute.
  4. Gradually add milk and continue cooking, stirring constantly, until the sauce is smooth and thickened, 3-4 minutes.
  5. Stir in spring onions, salmon peas and cheese; mix gently.
  6. Season to taste with salt and pepper.
  7. Spoon into 9-inch pie dish.
  8. Check mashed potatoes for spreadability.
  9. If too firm, mix in milk a little at a time to lighten unmashed potatoes.
  10. Spoon over the salmon mixture and, using a fork, spread evenly to cover. brush with beaten egg white.
  11. Bake for 15 minutes or until heated through.
  12. Brown top under grill for 2 min if necessary.
