Rainbow Chicken Salad recipe



  1. Cook rice as per packet, drain and cool.
  2. Drain the pineapple, reserving 2 tablespoons juice.
  3. Combine pineapple, mango and the next 5 ingredients.
  4. Combine mayonnaise, orange juice concentrate, salt, pepper and reserved pineapple juice until smooth; toss with chicken mixture.
  5. Chill several hours or overnight.

Add almonds just before serving.
