Vegetarian Lasagna

Vegetarian Lasagna recipe



  1. Soften sheets in boiling unsalted water for 5 minutes or until tender; drain and set aside.
  2. Cook spinach according to package directions and drain well.
  3. In a saucepan cook mushrooms, carrot and onion in oil until tender.
  4. Stir in tomato sauce, tomato paste, olives and oregano.
  5. In a greased 13 x 9-inch baking dish, layer half the noodles, cottage cheese, spinach, cheese and sauce mixture; repeat the layers, reserving about 1/2 cup cheese for the top.
  6. Sprinkle with Parmesan cheese.
  7. Bake at 170 degrees C (Gas Mark 4) for 30 minutes.
  8. Let stand for 10 minutes before serving.

Freezes well.
