Vegetarian Chimichangas recipe



  1. Beat egg together until frothy.
  2. Melt butter in heated frying pan.
  3. Add bell peppers, mushrooms and onion.
  4. Stir until cooked.
  5. Add beaten eggs and scramble together.
  6. Remove from heat.
  7. Place warmed tortillas on baking sheet.
  8. Fill with vegetables, allowing space to fold over edges.
  9. Fasten each with wooden picks.
  10. Lightly brown in 160 degrees C (Gas Mark 3) oven.
  11. Remove wooden pick.
  12. Top with cheese and salsa.

Garnish with sour cream and avocados.
