Oven Roasted Ten Herb Chicken

Oven Roasted Ten Herb Chicken recipe



  1. Combine all the ingredients, except chicken in a large enough bowl to hold the chicken.
  2. Toss chicken in marinade and coat well with all the fresh herbs.
  3. Allow to marinate in refrigerator at least 2 hours.
  4. Remove to a baking pan, skin side up, and place in a 230 degree C oven for 15 minutes.
  5. Reduce the heat to 150 degrees C (Gas Mark 2) and bake until chicken is golden and tender (around 30-35 minutes).
  6. In meantime, cook potatoes for 15 minutes in boiling water, remove, drain and set aside.
  7. Remove chicken from oven and add 300ml hot water to pan.
  8. Deglaze pan and serve chicken with pan juices.
  9. Toss potatoes with beans, olive oil, garlic, parsley and salt and pepper to taste.

Serve along side of the chicken.

Serves 4.
