Ingredients

Method

  1. Cook macaroni until al dente, drain and set aside.
  2. Sauté the onion and garlic in olive oil for a few minutes.
  3. Chop up or lightly process the tomatoes and place into a slow cooker along with the stock and sautéd onion and garlic.
  4. Add the parsley and a little salt and pepper, cook for about 3 hours on LOW.
  5. Alternatively, cook in a regular oven at 150 degrees C (Gas Mark 2) for 1.5 hours.
  6. Add the cooked macaroni and beans.

Serve with grated cheese if desired.
