Poached Lemon Haddock recipe

Method

  1. In a large frying pan, preferable stainless steel or enameled cast iron, bring the water, lemon juice, rind and onion to a boil.
  2. Add the milk, salt, and pepper, and add the fish fillets.
  3. Reduce the heat and cook for 6 to 8 minutes or until the fish is cooked through.
  4. Turn off the heat and remove the fillets to a warm platter.
  5. Over medium heat, reduce the poaching liquid by half.
  6. Meanwhile, prepare the sauce.
  7. In a small saucepan, over medium heat, melt the butter.
  8. Add the flour and cook for a minute, while whisking, to cook the flour.
  9. Whisk in half the poaching liquid.
  10. The sauce will thicken immediately.
  11. Add the rest of the liquid and whisk well, adding the chives.
  12. Adjust the seasoning and serve the sauce over the fish.

Garnish with Parsley.

Delicious with with cooked green beans or artichokes.

Serves 4.
